Chicken Pesto Salad Bowl

A quick and easy meal in minutes! Chicken, cherry tomatoes, spinach and a creamy Greek yogurt–pesto dressing come together in a protein-packed salad that’s perfect for lunch, dinner, or meal prep.

Simply shake the ingredients up in a lunch-box for a healthy and satisfying meal.

Ingredients

  • 100g cooked pasta
  • 100g cooked chicken breast
  • 160 g fat-free Greek yoghurt
  • 20g pesto
  • 6 cherry tomatoes, halved
  • 50g diced red onion
  • 75 g spinach
  • Salt & pepper, to taste

Method

Step 1: In a Tupperware box, combine the Greek yogurt, pesto, diced chicken, cherry tomatoes, red onion, spinach, and seasoning if desired.

Step 2: Secure the lid and shake well until everything is evenly coated – then enjoy!
