Peanut Butter Protein Bars Recipe

Makes 12 bars

Ingredients

  • 250g Crunchy peanut butter

  • 100g Almond flour

  • 100g Protein powder

  • 80g Maple syrup

  • 80g Dates, chopped (soak if dry)

  • 60g Dark chocolate chips

Toppings (optional)

  • Coconut flakes

  • Chopped nuts

  • Goji berries

  • Pinch of Salt

Method

Step 1: If using dry dates, roughly chop them and soak in warm water for 10 minutes. Drain well before using.

Step 2: In a large bowl, combine the almond flour, protein powder and a pinch of salt.

Step 3: Gently melt the peanut butter and maple syrup together in a small saucepan or microwave-safe bowl, stirring until smooth and combined.

Step 4: Pour the peanut butter mixture into the dry ingredients and stir well. Add the chopped dates and continue mixing until the mixture becomes thick and sticky. Fold the chocolate chips through the mixture until evenly distributed.

Step 5: Line a 20cm x 20cm (8in x 8in) square baking tin with parchment paper. Transfer the mixture to the tin and press down firmly into an even layer.

Step 6: Sprinkle over the coconut, chopped nuts and goji berries, then gently press them into the surface.

Step 7: Place in the refrigerator for at least 1 hour, or until firm. Remove from the tin and cut into 12 bars.

Store in an airtight container in the fridge and enjoy as a satisfying snack throughout the week.
